Holiday Platter

This platter is a great piece to take to parties over the holiday season or even as a healthy interactive family lunch. Dips and veggies can be swapped for whats in season or for your favourites.


1 yellow, 1/2 red pepper

1/2 cucumber

1 avocado

3 carrots

Handful of olives

Handful of cherry tomatoes

Meats of choice

Oat crackers

Grapes, figs, passionfruit

Sundried tomato dip

1 garlic clove

Pinch of paprika

3/4 cup cashew nuts

1 roasted red pepper (from jar)

6 sundried tomatoes

1 tsp honey

Salt and pepper

(Makes 2 ramekins worth)

1. Make the dip. In your food processor add all of the dip ingredients. Blitz the mixture until you get a dip consistency, you may need to add a little water to break up the mixture, but you do want some texture within the dip. Add to small ramekins

2. Decide what you would like to use to display your holiday platter. A large chopping board works well, or a funky shaped dish.

Start to chop the different vegetables up into sticks. Arrange on the platter surrounding your ramekins of dip. Arrange all the other items you are using, olives, grapes, fresh meats etc.

3. Can be served with oat crackers or fresh bread.
