Luscious Lamb Wraps

Quick, simple and delicious!


2 small lamb leg steaks diced

1 onion sliced

1 small pepper sliced

Handful of spinach

Coconut yogurt

Handful of pine nuts toasted

1/2 pomegranate

1 tbsp ras el hanout spice mix

Sprinkling of nigella seeds

1 tbsp olive oil

Beetroot wraps (you can use any wraps)


In a large saucepan lightly sauté the onion and pepper in the olive oil. Put a lid on the pan and cook on a medium to low heat for 10 mins or so until soft.

Meanwhile add the diced lamb to a bowl with the remaining olive oil and ras el hangout and nigella seeds . Mix together and leave to marinate.

Toast the pine nuts in a dry frying pan

Once the onions and peppers are turning soft add the lamb to the pan and continue to cook for 10 mins or so until the lamb is cooked through.

Prepare the wraps on a plate with a dollop of yogurt. Add some spinach, then the lamb mix and sprinkle the top with pine nuts and pomegranate seeds.

Super quick, easy and delicious!
