Raspberry and Cashew Nut Dream Cake

This is a wonderful cake to make for summer parties, occasions or birthdays! Its utterly delicious and has no added sugar, its sweet from the fruit alone!. Full of healthy fats from the nuts it won't spike your blood sugar levels like normal birthday cake does. I hope you enjoy this recipe!

Prep and cook time: 4 hours


Ingredients

For the base

1 cup pitted dates

1 cup mixed nuts

1/4 cup desiccated coconut

1/4 tsp. salt

2 tbsp. melted coconut oil

Dash vanilla essence


Add all the base ingredients to a food processor and pulse until you form a crumb. Line a loose bottomed cake tin with baking paper and spread the mixture across the bottom. Chill in the fridge whilst you do the next part.


For the cashew nut cream

450g cashew nuts soaked in water overnight then drained

1 tin coconut milk

2 tsp vanilla essence

4 dates

Juice of 1 lemon

1 tbsp. melted coconut oil

1.5 cup of raspberries


Add all the ingredients except the raspberries into your blender (I used a Vitamix). Blend until smooth. Take the base out of the fridge and pour had the mixture into the tin and level it out. Add the raspberries to the remaining mixture in your blender and blend until combined. Add this layer on top of the cashew nut cream layer and level out. Pop in the freezer to chill for an hour.


For the berry layer

1 cup of berries


Blend the berries in your blender until smooth. Once the dreamlike has chilled and the top has started to set you can pour this layer on top. Leave to chill in the freezer for a few more hours then decorate the top!


I prefer to let my dreamlike thaw a bit before eating, which is no problem at all during the summer months.
