Smoked salmon and salad wrap

This is one of 3 recipes that has been designed to be a quick, healthy nutritious lunch that you can make at work. If you've got a busy job and you don't have much time to prepare food this recipe is for you. I designed the recipe so that it could be made on a lunch break with utensils you would usually find at work (if you work in an office etc). The ingredients can either be brought from home or bought from a local supermarket. You could prepare the chicken breast or rice in advance or use shop brought versions.


60g Smoked salmon

1/3 Cucumber

1/2 Avocado Handful baby tomatoes

Handful of salad leaves

1 Spring Onion

1 tbsp of yogurt


1. Chop the cucumber into circles, slice the avocado, chop the baby tomatoes and spring onion. 2. Lightly heat up a wrap in the oven or enjoy cold, spread the tablespoon of yogurt over the wrap.

3. Add a handful of salad leaves, the chopped cucumber, tomatoes and spring onion.

4. Rip up the smoked salmon and add to the wrap.

5. Roll up the wrap!

The great thing about all these recipes is how versatile they are. If one day you dont feel like having smoked salmon in the wrap it can be swapped for the chicken or the avocado and egg mixture. Play around with the recipes and see what you like!
